Their expertise may be in some aspect of soil, plant, animal or human health. Or it may be in topics related to environmental stewardship, public policy, or sustainable development. Eat LIke a Pig
Eric P. Berg grew up on a commercial cattle operation just outside of Kindred, ND. He received his BS degrees from NDSU in Animal Science and Ag Education and his MS degree from NDSU in Animal Science. He got his PhD degree from Purdue University., Postdoctoral fellowship at Texas A&M University. He joined the North Dakota State University Animal Sciences Department faculty in 2006.
Dr. Berg is currently researching the role of meat in the human diet as a means to optimize health and well being. He is using female pigs as a biomedical model for human females. The National Institute of Health notes that pigs are the best model for studying how food influences physiology, as pigs and humans have the same physiological response to food - both are simple stomached omnivores.
Dr. Berg has studied caloric intake, accumulation of fat, and cholesterol levels in pigs fed corn/soy based diets vs ground beef diets. Despite consuming more total feed/food and more calories, the ground beef fed gilts gained less body weight and deposited less subcutaneous fat over the 84 days on test.
Animal and human diets must contain essential fatty acids and essential amino acids; both of which are in a highly bio-available form in red meat. Lean high quality red mean can contribute to a low glycemic diet and provide essential proteins, and thus contribute to a healthy diet. Increasing consumer knowledge and awareness of the benefits will help the North Dakota livestock industry and human health.

Danny Beer, a 3rd generation rancher. With her husband Mike, they raise their four children while operating Beer Ranch in Keldron, South Dakota.
"I'm a farm/ranch wife and mother of 4. I've lived all my life on a farm caring for cows. Currently we raise cattle and a variety of crops.
"It is a great life and great way to raise children.

Dr. Gary Fettke is an Orthopaedic Surgeon practising in Launceston, Tasmania, Australia.
He has a major interest in the preventative medicine and encourages his patients to lose weight before undergoing surgery. Although his speciality is surgery, Gary believes it is much better to help people avoid surgery by taking preventative measures, which often involves primarily altering the diet. He is an advocate of a Low Carbohydrate Healthy Fat (LCHF) lifestyle for the health benefits.
He was “a fat kid” and has experienced ‘too many’ other health issues until changing his diet and lifestyle. He has concerns that as we get older the health systems will be under significant stress from financial and health burden aspects. It is simply unsustainable – a train crash in evolution.
In recent years Gary has focussed on the role of diet in the development of diabetes, obesity and cancer. He has been speaking out internationally on the combined role of sugar, fructose, refined carbohydrates and polyunsaturated oils linking together to be behind inflammation and modern disease.
Gary remains committed to understanding the central role of nutrition in everything ranging from our health issues to its role in influencing education, the environmental impact, economics, politics and belief systems.
He has incurred the wrath of regulatory bodies for his stand on public health, but he and his wife, Belinda, remain active defending the benefits of low carb healthy fat living. Their ongoing work has uncovered the vested interests and ideologies shaping nutritional guidelines at an international level.

Dr. Michael R. Eades, MD, received his BS in civil engineering from California State Polytechnic University. After working for six years in engineering, he made a career change and enrolled in medical school at the University of Arkansas for Medical Sciences. After residency, Eades, along with his wife, Dr. Mary Dan Eades, MD, started one of the first chains of urgent care centers in the United States. During his career treating patients in urgent care facilities, Eades developed an interest in nutritional medicine.
His subsequent work with thousands of overweight patients made clear to him that encouraging a reduction of carbohydrate intake worked better than most medications for obesity, diabetes, high blood pressure, and a host of other disorders.
After years of refining his dietary program, Eades, along with his wife, wrote Protein Power, a book that details their methods and went on to become a New York Times best seller for over a year. Since that time, the Eades have published 13 more books in the medical and nutritional field and authored a top-100 health blog at proteinpower.com. They have appeared on ABC, NBC, CNN, Fox, PBS, and hundreds of local TV and radio programs advocating the low-carbohydrate nutritional approach.

Dr. Jay Wortman has worked in family medicine, public health, medical administration and research. He has held senior management positions in Health Canada in Ottawa and Vancouver.
For almost 2 decades Jay has worked with low-carbohydrate ketogenic diet in both the research and practice settings. One of his studies was the subject of the Canadian Broadcasting Corporation documentary film, “My Big Fat Diet”. Jay is a frequent presenter on the benefits of a low carbohydrate high fat diet at scientific meetings and continuing medical education events.
Dr. Wortman is a Clinical Assistant Professor in the Faculty of Medicine at the University of British Columbia and has been a member of the Scientific Advisory Board of Atkins Nutritionals Inc. Jay currently practices in West Vancouver where he uses a low carb high fat diet for the treatment of metabolic and inflammatory conditions.

Lt. Col. (Dr.) Mark Cucuzzella is a Professor at West Virginia University School of Medicine. As a US Air Force Reservist he designs programs to promote healthier and better running with the US Air Force Efficient Running Project. Mark has presented running workshops on over 50 military bases. You can view modules on his Efficient Running website. He has been a national-level Masters runner, having competed for over 35 years with more than 100 marathon and ultra-marathon finishes. Mark is a two time winner of the Air Force Marathon and has a marathon PR of 2:24. As well as being the race director of Freedom’s Run race series in West Virginia, Mark is director of the Natural Running Center, an education portal designed to teach healthier running. He is also the owner of Two Rivers Treads – A Center for Natural Running and Walking in his hometown of Shepherdstown, WV. A software engineer looks at blood lipids.
